Access character that realtes to everything in a field?

In excel if I do a sumifs or countifs I can enter a * in one row as a criteria and it will not look for that character but considers everything a match, the next row will have a value and it will sum or count only matches. Is there anything like that I can enter into an access table. I have a table with fields named process, function, size and job Action. I have about 100 process, size and job action combinations that need to pull in all functions. Entering each function would literally add 100s of records to my table. Any ideas or workarounds would be appreciated.

    I don't really see what you're wanting to do with your access file. A search query?

    Maybe splitting your table into 2 tables and creating a relationship between them using 2 similar fields would be a start...
