Why so many people say"It's Interesting"?

When people say "It's interesting", this usually means nothing. ---Ha ha, I would say, it is interesting that "It's interesting" becomes Bullshit.

'It's interesting' has become one of those phrases that doesn't mean much unless you pay attention to how it's said. You're totally right in saying that it usually means BS. It's become a polite phrase that people say to fulfill their expected turn in the conversation without actually passing a judgment. But like with most chit-chat you can tell what people really think by watching their facial expression and listening to their tone of voice. For instance,"that's interesting" drawn out in a low pitch with a raised eyebrow is very different from "that's interesting" with a higher-pitched voice and a genuine smile.

When we say that it means it's engaging and hold attention or curiosity.

    It does have a meaning.

Unless it's said sarcastically then it's the opposite.
