1982 Yamaha Maxim 1100 Second gear is acting funny under acceleration.?

It's kind of like it slips, but not really.

Revs jump under 30% throttle. +/-

Still has some desire to move forward and will catch again if I let off the throttle and go again as long as I don't go too far with the throttle.

No clanking, grinding, crunching etc.

The funny thing is, all the other gears seem to work fine.

I haven't "got on it" in any other gears, but they react fine during acceleration.

I'm an automotive guy, and not terribly familiar with this bike.

Some insight would really help.

Sounds like the clutch is slipping. There is no "shifting" dog and therefore no adjustment. The "dogs" are nothing more than protrusions that mesh with holes or other dogs on the adjacent gear. The Venture problem mentioned was a shifting fork that would bend, letting the transmission to pop out of 2nd gear when under accelleration, so that's not your problem either.

Most bikes have two places to adjust the clutch, at the clutch lever and down at the transmission, usually at or behind the cover down by the shift lever. The lower one needs to be adjusted first followed by the upper one. The particular adjustment procedure will be specific to your bike. On my Kawasakis, I loosen the knurled adjuster at the lever first, then loosen the locknut on the lower adjustment, turn the screw in until it's snug, back it out 1/4 turn, tighten the locknut and then make the final adjustment at the lever. I'm not saying this is how to adjust your clutch, just giving you an example of how it's done on my bikes.

You might post another question asking for the specific adjustment procedure for your bike. A bit of advice, adjust the clutch properly before you take any advice on changing clutch plates and so on.

If it's anything like my 83 venture second gear is going out, this was a factory fault and is common on Vmax, venture, and maxim, it will continue to get worse.

The shifting dog needs a bit of adjustment, the gap (neutral) between first and second is a tricky spot.

Helps to have a Shop Manual for this, but isn't totally necessary.
