How do you make Italian ice?

I have found a few recipes online but they all talk about making your mix and sticking it in the freezer where you stir it once every half hour to prevent it from becoming an block of lemon ice. Its texture when finished was closer to that of a slushy or snow cone. the Italian ice you buy in stores is smooth and very small ice crystals.

Update:

The ehow is the one that I followed and ended up with a lemon slushi.

    Italian Ice is simply made using an electric speed blender ( such as used in bar tending ) and adding any sort of flavored syrup

    The sugar water can be any flavor such as grape or mango etc.. and it's nonalcoholic.

    If you do not not own a speed blender you can try making the Italian ice using a GE brand ice crusher or Kitchen-Aid brand. Crush ice on puree speed mode for ice.

    Add desired sugary syrup flavor. Serve chilled in a glass or paper cone.
