Strawberry jam seems very 'liquid'?

Just made my first batch of strawberry jam. It seemed to be 'skinning' over on the plate when I tested it quite well but looks REALLY liquid in the jars...Have I messed up - should I have boiled it longer or will it settle as it cools?

Sophie - i'm doing homemade hampers for family for Christmas so have gone for strawberry jam... I don't eat it anyway so I have no clue if it'll taste the same lol!

    Were your strawberries really ripe? Did you wash them in water? If you answer 'yes' to either (or both) of these questions then there's every likelihood that your jam won't set. If it's too late to take them out of the jars and reboil them with added pectin, you can always use the usual cooks excuse when things go wrong - change the name. They're not jars of jam, they're jars of strawberries, suspended in heavy syrup, and ideal for serving over ice cream :-)

    In my experience, no it won't set more later on. You can try boiling it longer but you won't get homemade strawberry jam to set much without adding pectin (either as jam sugar or liquid pectin). I always think that if you want it exactly like shop-brought jam, why are you making it at home? it'll still taste good.

    Also recommend storing it in the fridge in small jars as it'll mould quickly.

    if it tastes about right, put it back on the stove and boil for a few minutes before bringing it back to a simmer, it doesn't always help but you might be lucky. if after you let it rest and it settles pour out just over half of the mostly liquid stuff. also cornflour/flour will help. if you don't mind the cloudly look, won't affect the taste though. good luck(:

    it will solidify as it cools, you can use a little corn flour mixed with water to thicken it, but this can result in a slightly cloudy finished product, i have a great recipe for tomato relish, corn relish, and onion relish if you really want to impress them

    just put it back in the pot and let in boil again, leave it on longer this time. be sure to wash and sterilise you jars again too.
