What entree and sides go well with yellow rice?

I'm not really into Indian food, but I'm looking for more southern type dishes (If that makes any sense lol).

    In South Africa, we normally serve this dish with yellow rice. Sides that compliment bobotie are green beans, bananas, sambals (finely chopped onion & tomato), chutney, green salad, sweet potato or potato salad. It's easy & delicious. (It's similar to a meatloaf). Try the 2nd recipe!

    Bobotie

    2 tablespoons vegetable oil

    2 onions, peeled and sliced

    2 1/4 pounds good quality lean ground beef

    1 thickish slice of white bread

    1 cup milk

    1 tablespoon medium curry powder (or hot for the hale and brave)

    1 1/2 tablespoons sugar

    2 teaspoons salt

    freshly grated pepper (about a half teaspoon)

    3/4 teaspoon turmeric

    1 1/2 tablespoons malt vinegar

    1/2 cup seedless raisins

    2 tablespoons strong chutney

    2 bay leaves (or fresh lemon leaves if available)

    2 medium eggs

    METHOD

    Preheat oven to 350°F.

    Heat oil in medium sauté pan. Stir in onions. Cook over medium heat until transparent. Add ground beef. Cook until lightly browned and crumbly.

    Soak bread in half the milk, squeeze out excess milk and mash with a fork - DON'T TOSS SQUEEZED OUT MILK! Pour it straight back into remaining milk. Set milk aside, and ad pulled-apart bread to the meat mixture.

    Add curry, sugar, salt, pepper, turmeric, vinegar, raisins, chutney to the beef mixture. Spoon the mixture into a greased baking dish, and place bay leaves on top.

    Bake for 50-60 minutes in preheated 350°F oven.

    Beat egg with remaining milk and pour over mixture approximately 25 - 30 minutes before end of baking time.

    Serve with steamed rice (traditionally yellow!) and extra chutney.

    Pure South African comfort food! Especially nice in winter, or cold with a salad in summer.

    1 kg mutton (minced beef can be used as substitute)

    2 ½ tablespoons strong curry powder

    1 teaspoon turmeric

    2 tablespoons apricot jam

    2 almonds, quartered

    ¼ cup lemon juice (or vinegar)

    2 teaspoons salt

    ½ teaspoon white pepper

    ¼ cup seedless raisins

    1 green apple, grated

    10 dried apricots, soaked and cut up (or apricot jam)

    4 lemon leaves or dried bay leaves

    2 eggs

    Method:

    1. Pre-heat the oven to 180°C. Lightly fry the onions in the butter.

    2. Soak the bread in half the milk and mash with a fork.

    3. Mix the meat with all of the ingredients except for the eggs, the rest of the milk and bay/lemon leaves.

    4. Put the mixture in an oven proof dish. Push the lemon/bay leaves in on the top.

    5. Cover and bake for about 40 minutes.

    6. Beat the eggs and milk together and pour over the meat. Slightly lift it to allow the egg to run into the bobotie. Bake until brown on top (about 15 - 20 minutes).

    If you have the "Spanish" style of yellow rice, there's nothing more delicious than Chicken & Yellow Rice! My family loves this!! I usually only buy boneless chicken breasts when I'm making it, because it's a LOT less work when tearing the chicken up into smaller pieces to add it to the rice. My family & I also like the white meat of the chicken best, too. I add olives to mine right before it's done, but that would be up to you.

    Another TERRIFIC Southern side-dish we make all the time is: Yellow/or even white rice if you're out of yellow... Then we cook Red Beans which we put on top of the cooked rice. The Southern way is to add diced onions to the top of it, but again, that's your personal choice.

    In the South, we also cook-up Rice in the mornings, & eat it with sugar... Like you would Cream-A-Wheat, or any other hot breakfast cereal. You can then add whatever else you might like to it, such as milk, cinnamon...

    BBQ shrimp, get some fresh shrimp, (could be frozen I guess) do not peel, in a big cast iron skillet, melt a stick of butter, a tablespoon (or more of your favorite cajun seasoning)of Paul Perdones seafood magic, a couple of sliced cloves of garlic, 2 bay leaves, 1-2 cans of beer, a dash of wishershire sauce, a dash of tabasco. Sliced lemon circles. Bring to a boil. Add shrimp. Cook for 2 minutes. Serve over a bowl of yellow rice, and warm french bread. Yellow rice is also good with lemon pepper pork chops and green beans and garlic bread. I like to sprinkle lemon peper on my rice with this or even lemon juice.

    Simple roast chicken. Salt and pepper, maybe a lit rub of butter or oil

    Boiled shrimp. Sauteed celery.

    Chicken thighs rubbed with chopped garlic and toasted sesame oil, salt and pepper, grilled or broiled and served with chopped raw tomatoes and basil.

    Beef stew, goulash,etc.

    Chicken soup.

    Roasted or grilled tomatoes

    All sorts of fish dishes. And fish.

    Broiled clams or oysters. Bloody Marys with celery.

    if you're going southern, try a dosa. doesn't necessarily go with rice, but it's a fun dish and one of my family's favorites.

    rice pilaf ? add some broccoli chopped ,cooked . black end ,grilled or baked you favorite fish , chicken or pork chop.rice pilaf is rice cooked in onions with chicken broth, go on further add veg. top it with chicken,pork or fish what you desire.darn good grub.
