Buy plastic boards, several of them and use one for raw meats & poultry and one for veggies and fruit. Slide them in the dishwasher to clean or scrub well with hot water and dish detergent. Dip in bleach water and allow to air dry if you want more "sanitation".

I only use my wooden boards for breads. Solves all that.

Professional cooks say not to use wood cutting boards for meat. But if you have to use it, do what they do in restaurant kitchens. After use, pour salt on it and squeeze lemon juice on the salt and rub it well with the cut side of the lemon. Rinse with hot water and dry. Condition with mineral oil. I would try to at least put a piece of plastic or wax paper on the top when cutting meat. Especially if using poultry. You should never use on a wood cutting board.

I've had a wooden cutting board for about 25 years and we just wash it with Dawn and hot water after use, and let it air dry. Used for meats only. It's been fine.

I use a plastic type cutting board for vegetables.

You need an anti-bacterial cleaner. I have gone to plastic boards for meat and, especially, poultry.

    Simple washing keeps it safe.
