As a chef and having use both the extract and fresh pandan leaves in Singapore, it has a piney, vanilla and slightly musty flavour, we had a Malay-Indonesian restaurant in the hotel along with the Chinese and French/Northern Italian I was the chef for. Like Durian it is something you have to experience to either like,appreciate or not.

I first tasted Pandan on one of our many trips to Borneo. It was good, but having its own unique flavour I am not sure what I can compare it to. Pandan cake is really nice.We brought some essence home, as we liked it so much.
