What is the difference between reheating food in a crock pot and cooking in it?
I've read that you should not reheat food in a crock pot because it heats up slowly and the food can remain in the "danger zone" (under 140 degrees) too long and bacteria may grow. But you can cook raw food in the same crock pot and it takes just as long to get to 140 degrees, so why is cooking considered safe and heating isn't?

You just can't leave it there for a long time. I do it with Turkey for pot-lucks. Cook the turkey the day before, slice it up into the crock pot & refrigerate. Then add .25 cup of stock before heating on HIGH setting ONLY. Tastes like it was just carved. I've never found any advantage to reheating soups/stews that way, though, as it's just faster on the stove & you don't need to worry about them drying out like you do with meats.

There is little difference between an oven and a crock pot when it comes to end results. The Crock pot was invented more or less to eliminate the need for having your oven on while not at home, it also reduces your energy Bill, it does concentrate flavors better than an oven and many times the "pot" can be used as the serving dish. You can of course get close to the same results by using a casserole dish with a heavy lid and using oven temps below 300 degrees. High setting on a crock pot is approx 300 degrees, while low setting is close to 250. Reality is, before crock pots, slow cooked meals were done in the oven.

Shannon, there isn't any advantage in reheating in the crock pot, than on the stove. On the stove is quicker. In the crock pot it's slower and have had food come out dry.

I do it all the time, and it's fine. If you are going to be there as it heats though, and you are worried, just turn it on high and stir it frequently so that it will heat up faster. I never have had to do this, I just heat leftovers on low while I'm at work and its always been fine...

heating takes alot of moisture from foods making it have less of a nutritional value. Also heating reduces amounts of natural sugar and salts in food meaning more seasoning would need to be applied so thats just unhealthy.
