I use banana bread recipe. Just change the cup of banana to cup of cranberries, fresh, frozen, dried, chop them a bit if fresh or frozen.
If you do not want the orange zest, just leave it out. It is for flavoring and not at all necessary. I am allergic to citrus and the zest of lemon, lime or orange gives me problems. I leave it out of any recipe calling for it.
You can use a zucchini bread recipe also to the same good result.

If you favor, you'll alternative cranberries for the raisins to have an all cranberry bread.

You can always leave out the orange rind. All it will do is reduce the orange citrus flavor in the recipe.

You can take any banana bread recipe, and substitute dried cranberries, as well as some cranberry jam, to add a little moisture.
