Is menudo a healthy meal?

My wife thinks menudo is bad for me, but most of the ingredients are actually low fat. From the hominy to the chiles, there isn't much there that is fattening other than perhaps the tripe. But I am doubtful that it's very fattening since it's not a muscle that builds up fat.

Any info and links are especially appreciated!

    I agree that it should be pretty healthy and whilst I haven't had it that way I do like tripe and onions in a creamy white sauce.

    The chilli would affect me.

    The soup menudo is a traditional Mexican dish, made with beef stomach in a clear broth or occasionally with a red chili base (this variation is called menudo colorado). It is traditionally served on special occasions or with family. Usually, lime, chopped onions, and chopped cilantro are added, as well as crushed oregano and crushed red chili peppers. Boiled tripe has a tough chewy texture very similar to calamari, but with a completely unique flavor and smell.

    Tripe and Onions.

    1½. lb (675g) Tripe

    2¾. Cups (21 fl oz) 600ml Milk

    1t Salt

    1 Bay-leaf

    1lb (450g) Onions. (quartered)

    For the Sauce

    2T (1 oz) 25g Butter

    ¼ Cup (1 oz) 30g Flour (all purpose)

    2t Parsley. (chopped)

    1. Cut the tripe into 1½in. (3.5cm) squares. Place it in a large saucepan, cover with cold water and bring to the boil. Simmer for 5-10 minutes, then drain.

    2. Add to the saucepan the milk, salt and bay-leaf and simmer for 20-30 minutes.

    3. Add the onions and continue cooking for a further 15 minutes.

    4. To make the sauce:

    5. Melt the butter in a saucepan, stir in the flour and cook for 1 minute.

    6. Drain the milk from the tripe and gradually stir it into the pan. Bring to the boil, stirring until thickened.

    7. Stir in the parsley and season well with pepper.

    8. Remove the bay-leaf from the tripe. Stir the tripe and onions into the sauce and heat through until piping hot.

    9. Taste and check seasoning. Turn into a warm serving dish and serve immediately.

    Serves 4-6.

    I serve with mashed potatoes and steamed leeks.

    I am pretty sure you've tasted at least one kind of nuts before. Most nuts got a high oil content. I don't know if you tried squid or octopus before, If you did, I'm pretty sure you did not see or taste any fat on them. Squid and octopus are very high in cholesterol.

    Menudo contained offal. Offal are usually very high in cholesterol and very high in saturated animal fat. Menudo is not healthy at all. Listen to your wife. She's right.

    PS: None fattening foods could be unhealthy too.
