Easy Pasta Recipes Wanted.?
I am just doing inventory of my cabinets and making a dinner menu and boy do I have A TON of pasta I need to use up, so I am here looking for quick, easy, inexpensive recipes to try over the next few months. I have lotsa Rotini & Elbows. Have any great suggestions?

Pasta Salad
2 lb box twisty macaroni
1 green pepper diced fine
1 small onion diced fine
1 large can black olives diced
2 tomatoes diced
2 cups Parmesan cheese
1 bottle of Italian dressing
1 bottle of French dressing
2 packages of pepperoni cut into pieces
cook macaroni until done drain and cool. Once it's cold mix in veggies and pepperoni, mix in cheese and all of dressing. It may seem like a lot of dressing but as it sets it will absorb into macaroni

Chicken Breast with Penne and Tomato Basil Cream Cheese Sauce Serves 2 2 Chicken Breasts - Pan cooked on medium heat in 1 tsp olive oil lightly salted (You can buy a bag of frozen breast in the freezer section) 1/4th box Penne Pasta - Cooked per package directions (Pasta is cheap) Sauce 1/4 cup chicken broth ($1.00) 2 Tbsp Tomato Basil Cream Cheese ($3.00 for a small tub, maybe cheaper) 3 Tbsp Parmesan Cheese (just a few bucks pending quality, will last a while) 1/4 Can Diced tomatoes ($1.00, whats left can be frozen for future use) Simmer on med/lo for about 10 minutes. Sauce will have some volume, but not be really thick. Remove from heat, sauce will thicken as it cools. Throw the pasta on first, than the sauce than the chicken. It should only take about 15 minutes. If you do not like tomatoes you can use the garlic and herb cream cheese and use frozen peas or broccoli. I've made it that way as well.
