how far ahead can i make meringue cookies for xmas?

    If they are truly in an air tight container and they are really baked until dry through and through, they will be ok to do now. Be sure to do them on a clear, low humidity day to have better success because they are like making a candy and this is the guideline for making candies - clear and dry.

    Meringues are the only cookies I don't bake ahead. They get really nasty really quickly. I have never had enough for trying to freeze them.

    Meringues are the ones I bake immediately before serving or gifting. Like within 24 hours.

    they can last a pretty long time. i would say a week. keep them away from moisture (like in the re frig) just keep them in a container on your shelve
