I made them a couple weeks ago to serve at xmas, and froze them. how many hours does it take to defrost them? also, i forgot to roll them in cocoa or nuts before freezing, should do it while still frozen, or wait till they thaw?

I'm in charge of christmas dessert this year and I need feedback on what i'm serving.
Traditional Xmas Pudding custard (mandatory or the elders will riot)
Shortbread Cookies (traditional in our house)
Here's are the added desserts. I'm not sure which way to go. It's all adults this year. Please pick which one you like best:
Pannetone Bread Pudding with Amaretto sauce (Giada's Recipe)
Mandarines or clementines (or some other fruit)
OR
Assortment of cookies and treats: Rum Balls, Almond Cookies, truffles.
Some fruit to break all the richness
