How to jazz up my Low Fat Brownie mix?
I've got the Betty Crocker kind and I'm worried I'll mess up the texture if add in too many things.

If you like coffee, substitute fresh-pulled espresso (or fresh-brewed drip coffee) for part of the liquid.
If you like coconut, you could mix in coconut before baking.
If you need for them to remain low-fat, however, be careful about adding things like chocolate chips or nuts to the batter, because these things have fat in them.

You can make s'more brownies. Mix and bake as directed. Right after they come out of the oven, sprinkle graham crumbs on top and then add a single layer of mini-marshmellows. Put them back in the oven turned off with the door open to melt.
Graham crackers and marshmellows are fat free.

Permit me to observe that most solutions correct the fat content and help to cover over that mix's taste.
I suggest you throw out the low fat stuff and make real brownies.
Real eggs.
Real fat.
Real Baking Chocolate.
Real Sugar.
With the large bittersweet choco chips mixed in.

Just make your brownies as usual, but serve with a layering of chocolate fudge and top with fresh berries like strawberries, blueberries or raspberries. Delicious and healthy too!
