beef stew (boeuf bourguignon? oven temp?
I've just finished making beouf bourguignon and have popped it in the oven to simmer for a few hours. my problem is that all the recipes i've read call for 2-3 hours at 300F to 325F. I've got to go to class and won't be back for 4 hours. What temp should I set the oven to?

275 degrees should get the job done for you without dehydrating it and, subsequently, burning it to a crisp. I'm assuming you have it covered in the oven, if not then cover it with a lid or aluminum foil.

Use the auto clock timer setting on the oven and set it to shut off automatically. Set your oven to 200 degrees, set it to shut off after 1 hour after putting your beef into a preheated oven or you can set the auto timer to start at a time that will turn the oven on 2 hours before you return home.
Don't forget that the food will still be left in the oven for a while after it shuts off, but it will still take time to cool off and thus will still be heating your food. I am guessing that your beef bourguinon will be perfect when you arrive home.
Look up how to set the auto timer in your stove booklet, and if you do not have one, try typing into the browser the model and name of your stove. That might get you the instructions.
