    Hi ma,

    Spinach is one of the easiest sides and has incredible nutrients, one of my favorites.

    If you're cooking for yourself and/or others, you need to consider one big factor.

    A "bunch" will significantly shrink to almost nothing. So consider that 2 bunches will feed

    2-3 people.

    After rinsing them really well, clip the stems, just cooking the leaves.

    A basic recipe is just to heat a saucepan with olive oil (preferably) and add ingredients you like;

    chop onions, garlic, peppers and season while they are in the "caramelizing" stage.

    That's when you put your spinach in. Try not to cook them to much so they have a little texture.

    No one likes wilted spinach, they turn a brownish color and the nutrients will not be the same.

    Cook them for about a minute. You can include almonds to this dish, possibly shredded cheese too.

    If you're going to be more creative with them, make a quick sauce for flavor and taste.

    A simple sauce will only take you a minute to prepare. Use a little mayo, mustard, red vinegar,

    Italian spice an a sprinkle of salt and pepper whisk it while adding a little olive oil. Delicious and good for you.

    Steam it, sauté it, blanch it. It all depends on what you want out of spinach. Steaming will break down the cell structure making it soft, don't overdo it. Sautéing will lead to the spinach messing with what you cook it with. Blacking keeps what little crunch it has.

    Hi ma, there are lots fo ways to cook spinach. My favorite is to finely chop up an onion and some garlic,add to saucer with milk and your spinach, cook on low heat, taking saucer off heat sometimes to avoid boiling. When spinage is tender, quickly drain off milk, serve spinage hot with grated cheese, it tastes great. Good luck.

    I like it kinda of simple but it's good with lots of dishes...I sautee some diced tomatoes and onions in olive oil and then add my fresh (cleaned) spinach little by little, moving it around, keep adding and adding untill it's all done and imcorporated. Of course sprinkle little salt, pepper and some chili flakes if you want.

    good luck
