if i keep a green pepper will it ripen to red or rot first?
i meant if i kept a green pepper that has been picked will it turn red guess i should have been more specific. i got some green peppers from my church and it would be really cool if they would turn red but most everybody is saying they will rot first oh well. i love red yellow and orange peppers but they are so much higher in price

I've grown California Wonder (green) peppers for twenty years, and they've always turned red for me when fully mature. The key to their turning is not so much the cultivar (although purple peppers turn purple, orange peppers turn orange, etc.) as the degree of maturity when picked. Like tomatoes, which will ripen if they've "broken", peppers need to have reached a certain stage when picked, or they'll spoil before they turn.
They won't turn if they've been kept too cool. They must be glossy and full-size. Light won't affect the ripening, but placing them in a paper bag with a tomato, banana, or apple may hasten the process. It may take a week and a half, but if they haven't ripened within two weeks, they won't. If an eminent frost is your concern, pull the entire plant and hang it upside-down somewhere relatively warm. Do remember that they're perfectly good still green, but the darker colors--red, purple, brown--have vitamin counts that go through the roof. Hope this helps...

It will rot. Some fruits, like bananas, tomatoes, peaches and pears, continue to ripen after they are picked. Others, such as pomegranates, squashes and pumpkins, and peppers (and yes, these are all fruits, since they have the plant's seeds inside them), stop ripening very shortly after being picked. If picked green, they either rot or dry out: they will not keep ripening. BUT, green and red peppers are not the same plant: they are the same species, yes, but different varieties!!! So, a green pepper will never become a red pepper, whether or not it is permitted to fully ripen on the vine - although it will get SOME red on it, it will never become a fully red pepper. // Interestingly enough, red peppers have more nutrition than green - such as WAAAY more vitamin A.
