I personally prefer Sophie; she feels lighter and more complete to me, whereas Sofie looks a bit flighty to me for some reason... it's strange because I prefer Sofia to Sophia! I think they're both acceptable, but I think that 99.9% of people (especially here in Australia) will assume it's spelt 'Sophie'.
Here are some middles that come to mind for Sophie & Phoebe:
~ Sophie Madeline
~ Sophie Beatrix
~ Sophie Helena
~ Sophie Jasmine
~ Sophie Violet
~ Sophie Imogen
~ Sophie Genevieve
~ Sophie Louisa

~ Sophie Juliet
~ Sophie Adele
~ Sophie Florence

Sophie I love the way it's spelled with the ph I think it's so cute. Ray and is a idea for middle name. You can also look in your ancestry and see who's names you like out of your family that may go with Sophie, that way her name is a little centamental. ( sorry for spelling)

Sofie is cute and a little but different I think Sophie is such a common spellling of the name having a slightly different spelling will add to your daughters individuality. I think for a middle name you could have:
Sofie Annabel ...Surname...
Sofie Danielle ...Surname...
Sofie Jane ...Surname...
Sofie Page ...Surname..
Sofie Amelia ...Surname...
Sofie Kate ...Surname...
Sofie Claudia ...Surname...
Sofie Hope ...Surname... ( My favourite )
As for Phoebe:
Phoebe Jade ...Surname...
Phoebe Nicole ...Surname...
Phoebe Yasmin ...Surname...
Phoebe Fay ...Surname...
Phoebe Erin ...Surname...
Phoebe Sunshie ...Surname... ( My fave )
Just make sure the middle name rolls with the entire 3 names put together so
Georgina Isabella Green That works
Make sure it works
geor-gina isa-bel-la gree-n sorta fits doesn't it.
Just have fun and even though I told you to MAKE SURE IT FITS if you don't like the name that fits DONT USE IT! :)

My daughters call is Sofia Yasmin....yet you mentioned no longer Sophia in my opinion, i think of that considering you like Sophie, the middle call shouldnt initiate with a vowel. in basic terms seems slightly extraordinary. The Addison is okay, yet no longer any that initiate with an I or E...in basic terms doesnt sound precise. on the different hand, Sophie Addison feels like her first call is Sophia. in case you ought to, think of of a few thing that starts off and ends with a consonet. alongside with Sophie Morgan. even nonetheless it is your toddler...you call her what ever you prefer to :) BTW- i like the call!! sturdy success with naming her and congrats!!
