For Christmas we have always had sautéed mushrooms with our dinner. Does anyone know of a good way to do mushrooms without the wine?

He knows the alcohol is evaporated. But the flavor makes it difficult for him.

Some ideas for you:
Balsamic vinegar (as the previous poster suggested is great!)
Balsamic vinegar, garlic, oregano
Chicken stock & add cream - reduce until cream becomes thick
Soy sauce (mix in a little salt and sugar for additional flavor)
Butter, olive oil & garlic
Home-made tomato sauce, top with mozzarella
If serving as a side dish, use seasonings compatible with the main dish.

When you saute the wine into the mushrooms the alcohol evaporates. There is no alcohol in this dish once cooked.

A good way to get the same tartness is to use balsamic vinegar or lemon when you saute' the mushrooms.

I don't think it matters if you sautee them in wine because i think the alcohol cooks out. but you could try making them them with butter and garlic :) they are really good!
