If doing a pot roast for a joint of beef, would you put it in water or oxo and would you leave the fat on.?

Rather than roasting, I want to put it in a casserole dish and cover to try and keep it moist.

Half cover the meat in a casserole with boiling water. Add a beef cube. and a vegetable cube. Then a chopped carrot, onion. stick of celery if you have one. Simmer for about 3 hrs on a low heat in the oven. Remove the meat and blitz the rest which will give you a beautiful gravy to go with your meal..enjoy supercook.

I use vegetarian oxo - don't know why, it just seems nicer, as for the fat, I like to cook it with the fat on, then take the roast out to rest before carving and skim the worst of it off the top..

Stateofp, I use vegetable stock, also doesn't matter what roast joint, I leave the fat on, that's added flavor releasing.
