Vegetarian Holiday Meal?

Ok so one of my friends is a vegetarian who had a really lousy holiday with her fiancee's family. They were really rude to her. I want to have a special meal for her that everyone will enjoy to make up for it. Kind of a make up Yule/Brumalia meal. What should I make? Suggestions on dessert, sides and drinks would be great.

    CHILE RELLENO CASSEROLE, hits the spot with me.

    Jack cheese, Anaheim chilies, eggs and canned milk. Simple,filling, and extremely tasty.

    I would suggest:

    Wild rice (be sure it is not prepared with chicken broth if it's instant), green beans.

    Pasta is great for vegetarian holidays since it's filling and hearty. Spaghetti is an easy and filling food

    Pea pasta is good too. if you need a recipe:

    Medium cut pasta

    Peas

    cheese

    butter

    cook the peas, pasta, and butter in water and a little bit of milk inside a big pot until the pasta starts to lose it's sticky quality, then add some cheese and cook until it has lost all of the sticky undercooked pasta quality.

    Dessert: Pumpkin pie, or chocolate muffins

    Drinks:

    Apple cider is good around the holidays, if she eats eggs eggnog, milk with honey, spice tea

    A big fresh raw salad,

    with some pecans and macadamias sprinkled into it,

    then some linguine spagetti

    with mushrooms and garlic tomatoe sauce.

    Grape juice mixed with fresh lemon and club soda to drink

    and pumpkin pie with whole wheat crust for desert.
