How do you switch to vegetarianism in an omnivore household?

I have never eaten much meat, but I have also always admitted that I couldn't go without meat. That being said, I have recently made the decision to go as vegetarian as possible (meaning if I slip up I won't kill myself over it). How did you decide to go veggie, and was it easy or hard? I already cook alot of vegetarian dished so I think the menu will be easy. But I'm also a wife, and a mom of 2 (5 year old twins), so I'm going to be cooking for everyone. Any help,.suggestions on making the transition go smoothly?

    It was easy for me. I did a lot of my own cooking, but sometimes we'd all eat veg. Now, I live on my own, but I still will come home and have meals with my mom on a regular basis. When I cook for her, I make vegetarian things. (I generally will use more dairy or eggs than I would when cooking for myself, as my mom's boyfriend is convinced that it isn't "real food" unless it is made out of animal.) If anybody wants meat, they can make it themselves.

    However, if you don't think your husband would be willing or able to prepare his own meat, you will probably have to do it yourself. Make dishes that are easy to convert to vegetarian. Take pasta, for example. Cook vegetarian meatballs in one pan and regular meatballs in another. Add the tomato sauce and simmer while you cook the pasta. You get the vegetarian meatballs, the family gets the regular ones. The same goes for tacos. Have everyone assemble his or her own. You use beans, they can have beef.

    A helpful cookbook is The Flexitarian Table. It has a ton of recipes (all in seasonal menus) that are easy to make vegetarian or non-vegetarian, and all of them include instructions for making some vegetarian and some non-vegetarian. (The recipes are nearly identical except for the protein.)

    hi ,our son decided to become a vegetarian at age 11. rather than being difficult, the rest of the family has been eating better. go for it.
