How do I make Meatloaf? I have never made it before?

Update:

I was really looking for a homemade receipe, not a bought Meatloaf!

    I generally add chopped onions,a coupla slices of bread made into breadcrumbs,pinch of mixed herbs,a crumbled stock cube & plenty of black pepper to some mince,then add a beaten egg to bind it all together,squidge with ya fingers,put in loaf tin and bake for about 40 mins ..gas mk 6...thats how i do it,ya can't really go wrong.

    Preheat oven to 350 degrees

    (Spray a casserole dish with cooking spray)

    The Perfect Meatloaf

    You will need:

    1lb ground beef

    1/2 white onion

    1 tbsp garlic powder 1egg

    1/2 sleeve saltine crackers (crunched up)

    1/2 cup ketchup

    Sauce/Topping:

    !/2 c honey

    1/3 c worchestshire

    3 tblsp garlic

    Mix ingredients together above 6 ingredients and form into a loaf in casserole dish. Mixture should be easy to mold, if not, add more crackers.

    For sauce, on stove top, mix together 1/4 c honey, 3tbsp Worcestershire sauce and tbsp garlic powder in a cooking pan. Heat until mixture is slightly bubbling.

    Pour 3/4 mixture over top of meatloaf. After approx 30 mins, our off grease and continue to cook for another 30 mins. Let sit for 10 mins before serving. Pour remaining mixture over top. Slice lengthwise and garnish with parsley flakes or minced green onion.

    The way I make it is probably different from most anybody else's.

    Hamburger meat 1 to 1 1/2 pounds

    1 egg

    a package of meatloaf seasoning

    2 slices of toast nice and crunchy

    1/2 cup shredded cheese

    ketchup

    bbq sauce

    mustard

    pancake syrup

    steak sauce like A1 or Heinz 57

    in a bowl put in your hamburger meat, cheese and crunch up the toast into crumbles, then in a separate bowl mix the egg, meatloaf seasoning, ketchup, bbq sauce, mustard, syrup, and steak sauce, (just a few squirts of each) and stir it up really good.

    and then poor it in with you hamburger mixture. mix all together and put into a loaf pan and put into the oven at 375 degrees for about an hour. After it's been in an hour take out and put ketchup and bbq sauce mixture on top put back in for about 10 minutes.

    I use 1kg minced beef

    1 large onion,chopped

    1tblspn of mixed dried herbs

    1 egg

    2 cups fresh breadcrumbs

    1 cup canned tomatoes, chopped very fine(reserve the juice for glaze)

    mix all together & place in a greased loaf pan'

    For the glaze I mix about 1/3 of a cup of the tomato juice,3rd cup of BBQ sauce & 1tblspn brown sugar together & pour over the top.You don't have to add the glaze, that's just a personal choice

    Bake in a medium to hot oven for around 1-1/2 hours,checking it occasionaly with a wooden skewer to see how it looks in the middle,

    Take

    2lb Hamburger meat

    2 eggs

    1/2 onion chopped

    1/3/ cup catsup

    1 tbs Worcestershire

    a little onion-pepper and salt t taste

    enough breadcrumbs or oatmeal ( about 1/2 cup )

    put enough water in after you mix it all together to bind it good.

    put 1/2 of the mix ito a loaf-pan loaf pan sausage and a hunk of cheese

    someweresome-weremiddle and cover it with the rest of the mix

    stick into heated 375 degr. oven ( about 2hrs)

    if it gets to brown on top cover leightlywith foil.

    People have a lot of variations on how they like to do it...as for me, I keep it simple and tasty:

    While some recipes say to use half ground pork and half ground beef...I just use the ground beef (which I think is called "mince" in your country). And I don't really measure things...I just eyeball it and use my judgment, so don't be afraid to play with your recipe (maybe one time you do it one way-maybe another time you do it another way until it comes out the best way for YOU ;)....

    I start out with 2 lbs ground beef (seems like a good amount)

    I add 2 beaten eggs

    I add 1/2 cup bread cups per pound of ground beef (generally the seasoned kind) so that's 1 cup (since parsley is already in the seasoned I don't have to add it, but if using plain, add a good bit of chopped parsley---dried or fresh)

    I add a diced onion...not a huge one...but enough to where the onion gives it enough moisture and will be in every slice

    I add sea salt and pepper----shake it around the bowl to where you think it's enough

    I add a couple shakes of Worcestershire sauce (to zip up the flavor)

    And I add not quite a cup of ketchup (I used to use tomato sauce, but actually found the flavor of ketchup to taste better--so you can try either one).

    Using clean hands, of course, mix up the ingredients well...but don't overmix because that can make it tough. If the mixture is TOO wet because of the liquid that's been added, then just sprinkle in more bread crumbs. If too dry...can add a tablespoon or 2 of water even.

    Now make a nice ball of it and make sure the meat is packed in tightly together---put that into a 9x13 baking pan (DON'T use a loaf pan or all the grease will rise up the sides of it and make it yucky). Shape that mixture into a nice elongated loaf, rounding out the edges, smoothing the shape, use your hands to pat down across the top, close any gaps, etc.

    Now, if you used the ketchup in the mix....it's optional that you can make a topping for the meatloaf by combining brown sugar and ketchup to where it's kind of pasty yet spreadable and put that on top of the meatloaf. (If you've used the tomato sauce as an ingredient instead, then you can slice up some green pepper rings, lay across the top and add the rest of the sauce over the top, too).

    Leave it uncovered and bake in a preheated oven...350^ F (don't know what Celsius temp is, sorry)but you can look that up...but bake it for at least an hour. However, I never find that's long enough and will leave it for maybe another 20 min. (Just check on it...you don't want it to burn, but you want it cooked and browned nicely). Take it out and let it rest 10 minutes before slicing it. You can serve it with brown gravy or not, make meatloaf sandwiches the next day if you want. Goes great with any vegetable and mashed potatoes is a nice side, too.

    Like I said...people have their own versions...but this one always goes fast around here or whenever I've served it to others. (Some people use crushed crackers for the crumbs, etc or unseasoned crumbs...just experiment). Good luck! It'll be fun and easy.

    BTW: make homemade meatballs the same way, except omitting the ketchup in the mix...

    formula is 1 lb ground beef, 1 beaten egg, 1/2 cup bread crumbs...can add chopped onion, s&p, bit of Worcestershire sauce, bit of water to make it pliable for rolling. Roll in hands, put on baking sheet on foil (for easy clean up!)...bake 350^F or 375^F for 25 min or so til browned. (No frying, no mess...then use slotted spoon to add into your sauce and simmer a good hour to let the flavors seep into meatballs.) Sometimes I add a bit of grated parmesan cheese to meatball mixture when I'm making them for sauce...like about 1/4 cup--I forgot to say that: but for cocktail meatballs, I don't add the cheese.

    1.Preheat oven to 350 degrees F

    Ingredients needed for a chicken loaf.....less fat than beef

    * 1 teaspoon dark sesame oil

    * 2 Tablespoons finely chopped green onions

    * 2 Tablespoons finely chopped carrot

    * 2 Tablespoons finely chopped celery

    * 1/2 teaspoon minced peeled ginger root

    * 2 garlic cloves, minced

    * 1 cup cooked long-grain rice

    * 1/4 cup water chestnuts

    * 2 Tablespoons soy sauce

    * 1 to 2 Tablespoons Szechwan hot & spicy sauce

    * 1 pound ground chicken or turkey

    * Sesame seeds

    Preparation:

    Heat oil in small non-stick skillet over medium-high heat. Add green onions, carrots, celery, ginger root and garlic. Saute 2 minutes or until tender.

    Combine green onion mixture, rice, water chestnuts, soy sauce, and Szechwan sauce in large bowl; stir well. Crumble chicken over green onion mixture, and stir until just blended.

    Preheat over to 350 degrees F.

    Pack mixture into an 8 x 4-inch loaf pan coated with cooking spray; sprinkle sesame seeds over top of meatloaf. Bake at 350 degrees F for 50 minutes or until meat loaf registers 160 degrees F. Let loaf stand in pan 10 minutes.

    Remove loaf from pan; cut into 12 slices. Serve with Chinese hot mustard and sweet-and-sour sauce, if desired.

    Yield: 12 servings

    I'm not sure but my (somewhat pompous) comment is that once you've made a great Shepard's Pie, there's no reason to ever make meatloaf.
