What can I use instead of eggs, to prepare the wet mixture for coating chicken with bread crumbs?

    Buttermilk is a great option because it has a similar viscosity to eggs, is relatively low fat and imparts flavor. Your best bet is to coat the product in flour first, then buttermilk, then breadcrumbs. The flour will help the buttermilk adhere. A final note, buttermilk is higher in acid than other milk products, so the longer you soak the product, the tangy-er (sp?) and more sour the final product will be. This is either a good thing or a bad thing, depending on what you're cooking and on your preferences.

    dip the wet chicken in flour to coat it, then dip it in milk with Tabasco sauce added, about 1 tsp per cup of milk, then into your bread crumbs, it give the chicken a thicker coating and it looks AND tastes fantastic.

    You can brush on some mayo.

    Use buttermilk.

    Brush on sour cream, etc...

    A mayo and mustard mix is great and adds flavor.
