I'm looking for stuffed chicken breast recipe for dinner tonight?

I have thin sliced chicken breasts and want to stuff and wrap them, but I have no idea what to stuff them with! I was thinking something simple and involving cheese of some sort, because who doesn't love cheese. I am making stuffed artichokes to go with it. Any ideas?

    You could make Chicken Cordon Bleu. The way I make it is super easy.

    Make the cutlet about 1/4" thick.

    Add thin slices of swiss cheese and ham or bacon, and depending on how big it is, fold the chicken in half, or roll it up.

    You can use toothpicks to hold it closed.

    Coat the chicken in a thin coating of flour.

    Coat the chicken in scrambled eggs with a bit of water mixed in.

    Coat the chicken in seasoned bread crumb mix with a tsp of olive oil per cup of bread crumbs, mixed till it's crumbly.

    Put in a lightly greased baking dish.

    Bake at 350 for about 20 minutes until browned and cooked through.

    CHEESE STUFFED CHICKEN WITH CREAM

    SAUCE

    1 can cream of asparagus soup

    4 boneless skinless chicken breasts

    1/3 cup goat cheese

    2/3 cup dry white wine

    4 slices bacon

    salt

    pepper

    garlic powder or minced garlic

    1/2 red bell pepper

    1/2 tomato

    olive oil

    Cut the chicken breast lengthwise and put the goat cheese inside of each one. Sauté the bell pepper in olive oil and garlic. Cut the tomato into cubes.

    Wrap each piece of chicken with a strip of bacon. (Turkey bacon can be used.)

    Place the stuffed, wrapped chicken into a medium casserole dish. Pour the can of soup over the top of the chicken and top with the tomato and red pepper. Pour the wine over this and use the salt and pepper to taste.

    Cover with foil and bake at 350°F degrees until the chicken is cooked through.

    Serves 4.

    1 (10 ounce) package fresh spinach leaves 1/2 cup sour cream 1/2 cup shredded pepperjack cheese 4 cloves garlic, minced 4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness 1 pinch ground black pepper 8 slices bacon Preheat the oven to 375 degrees F (190 degrees C). Place spinach in a large glass bowl, and heat in the microwave for 3 minutes, stirring every minute or so, or until wilted. Stir in sour cream, pepperjack cheese, and garlic. Lay the chicken breasts out on a clean surface, and spoon some of the spinach mixture onto each one. Roll up chicken to enclose the spinach, then wrap each chicken breast with two slices of bacon. Secure with toothpicks, and arrange in a shallow baking dish. Bake uncovered for 35 minutes in the preheated oven, then increase heat to 500 degrees F (260 degrees C), or use the oven's broiler to cook for an additional 5 to 10 minutes to brown the bacon

    try some green or red pesto, wrap the chicken in smoked bacon or pancetta. will go really well with the artichokes.

    stove top with cheese...mushrooms with cheese.....even thin sliced ham, broccoli would taste good..
