How do eat ricotta cheese?
I know it's used To make lasagna but I'm wondering if you can eat it by itself and how or can you put it on bread??

You don't need to make strange mixture; ricotta has always been eaten as it comes out of the pot.
In greece and Italy children used to put it on a slice of bread; sometimes a spoon of sugar or o spoon of honey was added to make a kind of simple cake. My mother liked ricotta stirred in tomato sauce or dried ricotta grated on top of spaghetti.

I really like ricotta cheese. In some parts of the US it is also called Pot Cheese (http://en.wikipedia.org/wiki/Pot_cheese). Note that ricotta can be made with either cow or goat milk or a combination of both. Furthermore, ricotta can also be aged and then grated too! But you'd have to go to a specialty store to buy it (ask for "ricotta salata")
Here are some things to do with ricotta:
+ Whip it up with a fork until smooth, add a pinch of salt, and then spread on toasted bread and drizzle with olive oil
+ When using to make lasagna, whip it up as I mention above and add a big pinch of nutmeg to it for added flavor to your lasagna
+ Add a a few table spoons to a bowl of hot macaroni.. Whip it up as I've already mentioned and spoon it over a bowl of cooked fusili or macaroni, salt and olive oil and maybe even a dash of ground hot (red) pepper. Reserve some of the hot pasta water and spoon some on in case the serving is too dry.
+ Whip it up with a bit of white sugar (sweet to taste) and use on breakfast toast
+ Use / mix with steamed pumpkin and top your pasta with it
+ Use it a 1st course: Simply spoon it on a plate (whip it or spoon as is out of the package), drizzle with olive oil, a bit of sweet paprika and a sprig of parsley. Garnish around with rocket salad.

Ricotta of course is used in many pasta dishes. But if it is whipped and powder sugar added it can be used to put into shells for canoli's or other deserts. My mother ate it with fruit like cottage cheese. As far as on bread whip riccotta add garlic powder and tomato and put on toasted Italian bread.

Better for cooking but you can use it in desserts, too. It's a bit like cream cheese but with a slightly gritty texture.

used in italian cakes,cheesecakes..pastries and i like with.. a ricotta with some fresh basil,garlic and italian sausage baked in a roll...yummy. you can sweeten it and spread on bread...with a nice slice of cotto salami and tomato..
