How do you make really buttery pastry like bought Mr Kipling Mince Pies?

No sites please, I can look those up myself.

    8oz plain flour

    4 oz butter

    2 oz caster sugar

    a little cold water

    If you have a food processor then whizz up the flour and butter and sugar together and gently trickle a little cld water into it as it goes (like 2-3 tablespoons)

    After 20-30 seconds the mixture will combine to form one lump, take this out, press into a burger shape cover with cling film and put in the fridge for half an hour.

    Then simply roll out and use.

    You can buy all butter pastry in frozen sections of most supermarkets. Alternatively you can just brush butter/full fat milk onto the pastry prior to cooking.
