Dinner suggestions wanted please.?

I have a pack of skinless/boneless chicken breast and a pack of pork loin chops defrosted in the fridge. I need some suggestions/recipes to use this meat up over the next few days'. I am looking for something different than baked, friend, or a salad (with the chicken). Dinner is getting boring! Quick & easy recipes/suggestions are desired.

    I use the pork chops in Steak Diane. I use the recipe from the Joy of Cooking. Very fast, easy, and tasty. I serve it with buttered egg noodles and a green veggie.

    The chicken breasts can be used in Chicken Chi-Chi's (also know in the real world as Chicken Divan, I believe). I just posted this elsewhere, so here's the recipe.

    Ingredients:

    3 chicken breasts (or more, if you like it meaty)

    4 bunches of broccoli,

    1-2 pounds of medium sharp cheddar cheese,

    box of wheat thins,

    2 cans of cream of chicken soup,

    1/4 cup mayonnaise,

    curry powder,

    1//2 a lemon.

    optional = red pepper.

    Pre-heat oven to 350.

    Boil chicken breasts 20 minutes, just until done. Take out the skin and bones.

    Steam broccoli 10 minutes or less, just until tender crisp, don’t use the stalks, just the florettes.

    Combine soup, mayo, curry powder, red chili flakes, and squeeze a half a lemon into it and stir well. Taste for seasonings; I like lots of chili and lemon in mine.

    Grate the cheese.

    Cut up pieces of broccoli and place on the bottom of an ungreased baking pan. Then cut up the chicken into little bite sized pieces and put them on top of the broccoli. Then spread the sauce mixture over the chicken, evenly, from side to side over the entire area of the pan. Then cover with the grated cheese. Crush the wheat thins, and pour a little melted butter into them, mix together, and spread on top of the cheese.

    Put the whole deal into the oven and bake 25-30 minutes, until crust is browned and you see cheese bubbling up at the sides. Wait a couple minutes (easier to cut) to cool just a little bit, and cut it up. Put big ole chunks on your plate, eat with a fork until full.

    I might try carbonara, it is quick and easy to fix and most everyone likes bacon. A tossed salad, caesar or italian or garden or fruited, whatever sounds good. Some garlic bread and you have a meal. Fry the bacon the day before to save time. Pick up some gelato for dessert. INGREDIENTS for carbonara 1 pound dry fettuccini noodles 8 slices bacon 4 eggs 1/2 cup grated Parmesan cheese 1 1/4 cups heavy cream ground black pepper to taste (optional) DIRECTIONS Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain. Fry bacon in skillet over medium heat until crispy, remove and drain on paper towel. Chop with knife into bits. Beat the eggs, cheese and cream in a bowl, then add the bacon. Pour over the pasta in the pan and toss gently using tongs. Return the pan to a very low heat and cook for 1 to 2 minutes, or until slightly thickened. Don't overheat or the eggs will scramble. Season well with black pepper and serve

    Here's something different and delic for the chicken:

    Apricot Chicken

    The Ingredients.

    --11 oz jar of apricot preserves

    --1 t dried minced onion flakes

    --1 T dijon mustard

    --1 T soy sauce (La Choy and Tamari wheat free are gluten free)

    --1/4 t ginger

    --1/4 to 1/2 t red chili flakes (optional)

    --6 chicken thighs or equivalent body parts

    The Directions.

    --I used frozen thighs. Drop the chicken into your crockpot.

    --in a small bowl, mix all the other stuff

    --pour on top of the chicken

    cover and cook on low for 6-8 hours, high for 4-6--if your chicken isn't frozen, your dinner will cook faster.

    serve with white or brown rice and veggies.

    Asian Chicken Stir-Fry

    From: Campbell's Kitchen

    Prep/Cook Time: 20 minutes

    Serves: 4

    Ingredients:

    1 tbsp. vegetable oil

    1 lb. boneless chicken breasts, cut into strips

    1 can Campbell's® Condensed Golden Mushroom Soup

    2 tbsp. soy sauce

    1/2 tsp. garlic powder

    1 bag (16 oz.) any frozen vegetable combination

    4 cups hot cooked rice

    Directions:

    HEAT oil in skillet. Add chicken and stir-fry until browned.

    ADD soup, soy and garlic. Heat to a boil. Add vegetables and cook until tender-crisp. Serve over rice.

    This is our favorite pork chop recipe:

    Creamy Ranch Pork Chops

    From Campbell's Kitchen

    Serves: 4

    Ingredients:

    1 tbsp. vegetable oil

    4 boneless pork chops, 3/4" thick, salt & pepper & paprika

    1 can (10 3/4 oz.) Campbell's® Condensed Cream of Mushroom Soup OR 98% Fat Free Cream of Mushroom Soup

    1/2 soup can milk

    Half of 1 pkg. (1 oz.) ranch salad dressing mix

    Directions:

    HEAT oil in skillet. Add chops and cook until browned.

    ADD soup, milk and 1/2 pkg. salad dressing mix. Heat to a boil. Cover and cook over low heat 10 min. or until done.

    Favorite chicken recipe- I make this at least once a month:

    Rosemary Chicken Breasts

    Serves: 4

    Ingredients

    Chicken:

    * 4 pieces boneless, skinless chicken breast, 6 to 8 ounces each

    * 2 tablespoons balsamic vinegar, eyeball it, just enough to coat chicken lightly

    * 2 tablespoons extra-virgin olive oil

    * 3 stems rosemary, leaves stripped and chopped, about 2 tablespoons

    * Salt and coarse black pepper

    * 4 cloves garlic, cracked away from skin with a whack against the flat of your knife

    Directions

    Coat chicken in balsamic vinegar, then olive oil. Season chicken with rosemary, salt and pepper and let stand 10 minutes.

    Heat a medium nonstick skillet over medium high heat. Add chicken breasts and cracked garlic to the pan. Cook chicken 12 minutes, or until juices run clear, turning occasionally. The balsamic vinegar will produce a deep brown, sweet finish on the chicken as it cooks.

    Must love mushroom

    Here is an easy one pan dish that will rock there worlds.

    1.make a rub of garlic, lemon pepper and a little salt. rub both meats.

    2.take both meats and brown in a larger skillet. use 2 to 3 table spoons of olive oil.

    3.after browning, drop in one can of golden mushroom soup, one can of garlic mushroom soup. one can of water, 1/3 cup of wine(if you have any)Red wine is what I use.

    cover the skillet put in on simmer for 45 min.

    4.The last 15 mins. of cooking, put in 2 to 3 baskets of white and brown mushrooms, ( cut in 1/4s) and one bunch of asparagus. ( cut off the bottom end of the asparagus approx. 1/2 inch.)

    stir in the mushroom and lay the asparagus right on top to steam cook. Cover again for the last 15 mins.

    Sever on a bed white or brown of steamed rice.

    Easy to make, Easy clean up with only one pan to clean. best part the food is great!!

    Casseroles with loads of vegetables, Or cook the chicken and make a hot and spicy soy sauce with noodles :)

    i would do a lemon thyme marinated chicken breast over brown rice and a mandarin orange salad with a citrus dressing.
