Should i use gravel, something finer like sand, or some other such as Mars Fishcare North America Planting Media(if i'd like to grow alot of life plants)?

It is possible to do a planted goldfish tank just not a pristine one. Java fern seems to be pretty resistant to goldfish attack but most others will succumb. I am convinced my goldfish are eating the expensive ones just to screw with em. If you want to do plants then go for the planting media, if not then gravel or sand is fine.

I use gravel for my goldfish tank. Never tried sand with them. If you want to grow live plants though it will be tough. Goldfish see most live plants as food and will quickly devour your tank.
