Best way to cook chicken breast?

I am making brown rice tonight and chicken breast for dinner tonight. What is a good and yummy way to cook my chicken breast? I still want it to be healthy too!

    Poach it lightly in a can of low-fat, low-sodium chicken broth that you've seasoned with a touch of garlic and thyme and a splash of white wine. Use fresh if you have them; leave the garlic whole and tie the thyme with a string to make stem removal easy. When it's just barely done, take it out, keep it warm, and bring the broth to a boil. Stir in 1 tablespoon of cornstarch that's been mixed until smooth in 1 tablespoon of cold water, let return to a boil, then reduce to a simmer and let thicken slightly. Remove the garlic cloves and thyme stems. Salt and pepper to taste. Slice the breast, return to the sauce to warm throughout, and serve over the rice. Fast, easy, but warming and still healthy, while retaining flavor.

    You could dredge in Italian seasoned bread crumbs and saute it in olive oil and garlic on a griddle, squeeze a little lemon juice on it when it's done. Or you could wrap it in foil along with cut up potato and carrots, maybe an onion or some mushrooms, and bake it for about 20 minutes (longer if there are bones) in the oven. I'd put some soy sauce or lemon juice on it, or if you want to open a can of cream of something soup you could put a couple tablespoons of that on the stuff. Cub Scouts used to make that. One other thing I do is dredge it in Bisquik or flour or breadcrumbs and bake at about 350 for about 20 minutes, longer if there are bones again.

    Beat it thin, to even the thickness all over. Season w/ S&P, then dust w/ a little flour. Sear on both sides in a skillet w/ a tad of EVOO. Deglaze pan w/ lemon jc and a bit of chicken stock. Reduce sauce to thicken, serve sauce over chicken.

    I salt and pepper both sides of the chicken breasts and also add a little paprika and sear it in a pan with some butter. Simple and easy!

    broccoli chicken casserole

    cube chicken, place in bottom of pan layer, then add thawed frozen broccoli, broccoli cheese soup, stuffing mix, bag of shredded cheddar cheese cook on 350 covered for 30 min

    i usually marinate it in italian dressing and a little paprika and i broil it in a conventional oven. if you wanna fry you can always fry it in olive oil and garlic

    bake it!! you can add cream of mushroom soup and the rice and bake it all together!
