the spouse boils beef or chicken during the night leaves it out on the countertop all night to cool down and puts it in the fridge in the morning (if the spouse remembers) and reheats it for dinner that evening?
the temperature in the house during the night is about 55-60

Let me preface this answer first: I am not a 'freaks out when food is past it's expiration date and throws it out' kind of person.
I make my own kim chee which consists of cabbage and other ingredients that sit in a hot garage for 3-4 days.
I can my own food and often don't follow recipes which is what the industry frowns upon.
I would not eat this meat.
Imagine the temperature dropping from over 100 degrees to room temperature. There is about 6 hours where it sits in 'bacteria heaven' around 70-50 degrees. Meat I might feed to my dog, but not meat I would eat.
My suggestion, putting the meat in to another container and putting it in the fridge. It's still not the as good as letting it cool for an hour or so and then putting it away but better than leaving it out all night.

no it will not be fine. ever heard of salmonella? I WOULD NOT take a chance AT ALL!! Seriously. And do not allow your children to eat it. You are taking a huge chance here. Stop It!!
