Pasta is easy to make without cheese or meat when you're a hungry vegetarian. All you need is a tomato sauce of some kind. It's better to make your own pasta sauce because the kind you buy at the store (Ragu, Prego, etc) can be made with hidden animal ingredients like chicken seasoning or cheese seasoning like parmesian.

I like to use tomato sauce, but some say it's too acidic for them. I add rosemary to it, basil, crushed garlic (easy if you have garlic masher), finely chopped green onion, and whole green olives in with bowtie pasta.

I especially like rainbow pasta with Italian dressing which is the simplest vegetarian treat. For a protein source, I throw in some chick peas aka garbanzo beans and stir them in with the pasta.

You might also like to season with pepper and lemon juice.

I am a fan of soup. Just use your favorite vegetable stock (or make your own).

Ooh, now that I see the ingredients... I suggest roasting the brussels sprouts with olive oil (salt and pepper to flavor, if you want). Make yourself some black bean soup as well. If you have an onion and/or garlic, saute it in a bit of oil, dump in a can of black beans (liquid and all), then season with whatever you want. Cumin is good, as is cayenne. If you have chili powder, use it.

You can eat well on that!

I understand the vegetarian aspect, but what's this about the no seasonings? There are many vegetarian dishes you can prepare. Personally, I like bean burritos (beans, rice, guacamole, etc... wrapped in a flour tortilla), vegan pizza (flatbread/pita with tomato sauce & veggies), hummus, rice & beans, etc...

Beans, rice and a big salad!

Chili, stir fry, baked potato, or salad.
