how to make breakfast pancakes?

Hi there,

I always buy pancakes from the supermarket and now fancy making them myself. I've tried making them from Nigella's American pancake recipe but they are not turning out fluffy. they are pretty horrible and really doughy in the middle but burnt on the outside! (My poor kids) Help!!! I have no idea how high to have the heat and have tried low, high and medium but the butter is just burning no matter what!! Are crepe type pancakes easier and is there a good recipe? Or shall i keep persevering? Thanks. x

Does anyone have a good recipe and can give any tips on cooking?

    You sound like you may be mixing too much, that will make your batter become "tough" and not fluffy. Doughy in the middle is to much batter in each cake, cook them on med high. My thing is always the first cake always goes to the garbage! You learn then the temp to have them bubble perfectly. They should bubble completely before you flip. You should have the perfect cake then. Any recipe of your choice will work then.

    can buy box mixes, Betty Crocker, Aunt Jemima, I perfer Krusteaz

    1st heat the pan on medium-high, then add butter/ spray with Pam just before adding batter...

    Ingredients

    6 cups all-purpose flour

    1 1/2 teaspoons baking soda (check expiration date first)

    3 teaspoons baking powder

    1 tablespoon kosher salt ( can reduce amount)

    2 tablespoons sugar ( can sub 2 PACKETS STEVIA)

    Directions

    Combine all of the ingredients in a lidded container. Shake to mix.

    Use the mix within 3 months.

    "INSTANT" PANCAKES:

    2 eggs,

    2 cups buttermilk

    4 tablespoons melted butter ( can sub grape seed oil for an added falvor)

    2 cups "Instant" Pancake Mix, recipe above ( or fololow any box mix directions)

    1 stick butter, for greasing the pan

    2 cups fresh fruit such as blueberries, if desired

    Heat an electric griddle or frying pan to 350 degrees F. Heat oven to 200 degrees F.

    Whisk together the egg whites and the buttermilk in a small bowl. In another bowl, whisk the egg yolks with the melted butter.

    Combine the buttermilk mixture with the egg yolk mixture in a large mixing bowl and whisk together until thoroughly combined. Pour the liquid ingredients on top of the pancake mix. Using a whisk, mix the batter just enough to bring it together. Don't try to work all the lumps out.

    Check to see that the griddle is hot by placing a few drops of water onto to the griddle. The griddle is ready if the water dances across the surface.

    Lightly butter the griddle. Wipe off thoroughly with a paper towel. (No butter should be visible.)

    Gently ladle the pancake batter onto the griddle and sprinkle on fruit if desired. When bubbles begin to set around the edges of the pancake and the griddle-side of the cake is golden, gently flip the pancakes. Continue to cook 2 to 3 minutes or until the pancake is set.

    Serve immediately or remove to a towel-lined baking sheet and cover with a towel. Hold in a warm place for 20 to 30 minutes.

    Yield: 12 pancakes

    Im assuming you buy the frozen already" made" pancakes you just toast? right

    Just buy a box of complete pancake mix. Just add water.

    Don't use butter it burns use margarine or oil.

    Medium heat preheated pan. Don't over mix your batter, lumps are ok, just 10-20 stirs .

    Take a 1/3 measuring cup, dip in batter then pour on pan. bubbles will form let them until bubbles turn into holes then pancake is ready to flip, give it 2 minutes, done. Serve with butter if you must.

    After you accomplished this you can try homemade and variations.

    I use a blend of buttermilk and buckwheat mixes with flax meal, if you want healthy.

    You cook them on medium to low. Pour the batter into the pan using a laddle or other such thing and dont make them to large, you can probably do 3 to 4 at once depending on pan size. Flip them when you see bubbles all over the tops of them, that means that side is done. Then cook the other side for less time than the first side because it should already be on its way to done.

    I always add a little bit of vanilla to my batter, but that is personal preference.

    This is my fave recipe and works everytime!!

    120ml buttermilk

    150g plain flour

    ½ level tsp baking powder

    pinch of salt

    3 large eggs, beaten

    I throw it all in a blender and then cook them in butter (sizzling) for around a minute each side uintil they are golden and fluffed up slightly.

    As a change every now and again I put 2-3 ripe bananas in the mix and they are gorgeous!

    In fact I am going to go and make pancakes now :-)

    ive got a great easy recipe and all my family loved them:

    1 cup of milk

    1 cup of flour

    2 eggs

    tspn oil

    1/4 cup of sugar

    tspn Vanilla (optional)

    mix all together then fry in a lil butter until golden brown u may need

    to add a lil water if it thickens up a lil!
