Timely question .. I've been on a Billy Joel kick myself lately. I think my all time favorite Billy Joel song has to be "Goodnight Saigon."

Billy is beyond amazing he's in my top 3 favorite musicians ever and it would be really hard to pick just one song :P but some that i think are his best are Captain Jack, Ballad of Billy the kid, Ain't no Crime, the Stranger, We didnt start the fire, My life, You may be right, Dont ask me why, Stiletto, Zanzibar, and Half a mile away. i think that if i realllllly had to choose just one song though, i would choose River of Dreams. it never gets old :D

"For the Longest Time" \\ Do you know that there is only ONE musical instrument in that song? A cello, I think. Everything else is Billy's voice. Love it.
