Gift for a single mom that she has to use only for herself and not her kids?
Because I know, given the opportunity, the gift/gift certificate would be used for / spent on her kids, if it could be. (i.e. Bath & Body Works products or gift certificate)

arrange for a sitter and take her to get her nails done, and or a pedicure, along with a nice coffee and cake afterwards with a bit of adult time shopping. Free time with an adult is all but priceless and as some one that was a single mum for many years just being able to do some thing without my two in tow was beyond a gift :]

I agree with the others who have said that if she wants to spend money on her kids, you should let her. If money is tight, she might want to treat her kids rather than herself.
That being said, an experiential gift might be a good one. Someone already suggested arranging for a sitter and taking her out for drinks or to get her nails done. Is she interested in bungee jumping or sky diving? The kids are definitely too young for that. Maybe she'd like a night out at the clubs. You get the sitter and be DD.
You can sometimes buy specific treatments at a spa. Maybe she'd like a bundle of manicures so she can take her kids (if they are girls) out for manicures with her. You could buy her a gift of food or something for her kitchen. A gift certificate to a gourmet food store might be nice. She and her kids could choose some things and cook together.
A gift of your time might also be appreciated. Offer to sit for her, hire a housecleaner, or make her some meals.
Sign her up for wine-of-the-month or fruit-of-the-month or something. Everyone loves those wonderful fruit boxes.

Like mentioned, a spa gift card would be a good idea, but depending on the age of the children, they may be able to get to that to - my mom's friend split up her expensive manicure gift to let her 12 year old daughter and her friend get their nails painted.
A massage may work, or some sort of treatment that's not for children (maybe something with champagne included, but remember these things can usually be exchanged for kid friendly treatments if offered)
A gift certificate to a winery or tickets to the theatre (like opera, not movie) or something else that won't be of interest to children.
But also keep in mind that parents like to spent money on their children, and so it may be worth it to them to give their child something instead of spending it on themselves. One of the best things I can think of is getting something for the mother that she can enjoy with her kids, like a gift certificate to a restaurant, to a movie theatre, or movie rental tickets.
