    Let's start with making a cake.

    The baking soda or baking powder reacts with acid to produce CO2 gas for leavening

    Mixing the cake forms a protein called gluten from the proteins in the flour

    In baking the cake:

    the egg protein is denatured

    the gluten protein is denatured by the heat

    more CO2 gas is released

    the browning on the surface is the combination of proteins and sugars called maillard reaction
