I knew my horse was bombproof after him finally allowing me to carry a flag on him in grand entry at rodeos. He would rear before when he even saw a flag flying. He hasn't spooked at anything since.
And for "gymkhana" type games.. I'm an avid barrel racer, but I'll often set up the poles to change it up a bit. Obstacle courses are always fun as well!

To make horses bombproof, there is a really food native American way. You put the horse in a round pen and chase is for a while. Then, grab whatever you want, something that the horse is probably or defiantly scared of, like a plastic bag and rub it all over the horse. If he accepts it, drop the bag and reward him. If he moves away and tries to run, make him do two laps. Repeat this until he completely masters the rubbing of the bag. Then try patting the bag on him. Do everything up to literally hitting him (not too hard mind you) until he's totally fine. Do this with literally anything, saddle, pad, brushes, whatever. I realize it may seem a little cruel, but it really truly isn't! I ride English and western. So I do gymkhana and I love barrel racing. I think that's the funnest. I also like hurry scurry. I love to go on trails with my friends and try to discover new trails! It's so fun fun!!! Teaching your horse to do new style of riding is fun too. Maybe try priceless, saddleless! It's incredibly fun! Takes practice but it pays off! Isn't horseback riding just a blast!?!?!

1) Pole weaving, barrel racing, jumping figure eight, keyhole, etc are all great for making riding fun and interesting for your horse, but also makes you work on turning cues. Would could also try bandit's chase, where evey rider has a bandanna sticking out of his/her back pocket, and the others try to grab it. This gets the horses accustomed to being close to each other. You can also try a pantyhose race, or ribbon race, where there are two people on horseback. You both grab the end of a pair of tights, and race around a barrel and back to the finish line. Pennet (flag stuck in barrel at the end of the arena, which you have to grab, swap out as fast as you can with the flag in your hand, then race back) is great for getting a horse used to banners/flags.
2) Try these ideas:
-Trail rides, trail rides, trail rides (Sounds silly, but I've seen horses spook at chipmunks)!! Even down the road is great.
- Riding on black top (I've read that it looks like a bottomless pit to the horse)
-Whenever possible, introduce the horse to cows, sheep, goats, pigs, dogs, cats, chickens, etc
-Tie a plastic baggie/tarp onto a dressage whip and rub it all over your horse
-Flap tarps/feed sacks over it's head, under it, ect
-Rub/pat your horses neck and crest while riding
-Throw random piles of junk in the arena
-CAREFULLY expose your horse to traffic, semi trucks, trailers, motorcycles, bikes, etc
-Walk the horse into poles, barrels, etc so that they get used to knocking these over
-Horse shows are busy and loud, so they get a horse used to handling these kinds of situations
-Trailer him frequently, even if it's for a 10 min ride down the road
-Pull sleds, wagons, tarps, etc behind him
-Rub/pat/stretch him EVERYWHERE
-Rub a rope lead around his legs, but of course, exercise caution
-Make large, sudden movements around/on your horse, but be careful
-Practice falling off. Have someone lead you at a walk, and just carefully slip off
-When mounting, mount with/without a block, and mount of both the left and right
-Take off a jacket while on your horse (be cautious, have someone hold him)
-Give him EXPERIENCE. Don't expect results over night. Constantly throw these things at him, and soon, he'll ignore them.

Do things you normally wouldent do, i took my horse for a walk into town and she did greattt! walk them over tarps, put tarps on them , make them pull sleds, tie a sweater over their heads so they are blind and get them to follow your voice ( AMAZING for trust) bareback letting the horse lead, try to get him to walk on 3 feet, hold one up , ( only for a few strides) tie ropes to his 2 frount feet and walk him SLOWLY. he will step on the rops and trip himself, let him figure it out and keep him calm. Once he is calm and not moving, take the ropes off. This teaches him , so if he ever gets caught in a fence, he will stand calm for someone to untie him., Give treatss, but dont spoil, good luck:)
