If you can't find mascarpone, blend a room temperature 16 oz. package of cream cheese with 1/3 cup sour cream, and 1/4 cup of heavy whipping cream. Or, mix one 8 oz. package of softened cream cheese with 1/4 cup of heavy cream and 2 tbsps. of softened butter in a bowl.
