  • Can I use 33% whipping cream to make mascarpone cheese?

    I want to make Tiramisu, and the stores in Canada apparently don't sell mascarpone cheese, OR heavy cream.

    The highest fat content I can find at all is 33% whipping cream, and I'm pretty sure it has been ultra pasteurized and it does contain carrageenan...

    Will this be good enough to make mascarpone cheese, or do I have to settle for a cream cheese recipe?

    Unless someone knows where to get either the cheese or the cream in Nanaimo, BC... that would be fantastic...

  • Where can I find some nice, affordable wedding flats?

    I think the question says it all. I'm having trouble finding shoes I like, let alone affordable ones I like.

    Affordable for me, means around the range of $50.

    Short heals would be okay as well. Just needs to be suitable for an outdoor wedding.

    For my August wedding I would like to have a tiered cake that is Cheesecake, Carrot Cake, and then white cake with buttercream icing. So I know my cake will be very heat susceptible.

    Is it possible for me to store the cake in a freezer and then put it on display, and if so, how long do I have to wait for the cake to thaw, and then how long before I have to cut it before it starts to fall apart? ... ...
