I'm ovo-lacto vegetarian. Feel free to leave out the ovo-lacto part as I am supposed to be eating less sodium right now. I'm just lost for ideas. Thanks.

Make some red lentil soup.
Dice and saute (in olive oil) an onion in a good soup pot. When the onions are translucent add about one cup of red lentils and saute them for about one minute. Add two tablespoons of flour and stir the mixture for about one minute. Add some vegetable stock (about a liter) to the lentils and turn down the heat to simmer for about one hour. Stir occasionally. When the lentils are soft pour the soup into a blender and puree the mixture until it is smooth. Garnish with fresh mint if you have some. Salt and pepper as you'd like. Serve with a fresh green salad and some home baked bread for the best experience.
This meal has all the protein and carbohydrates your body needs and tastes great!

PASTA PRIMAVERA 1/2 Cup Ricotta cheese 1 cup vegetable broth 1 Tblspn Unsalted butter 1/2 Tspn salt 1/2 Tspn pepper 6 Asparagus Spears cut into 1 1/2 inch spears 1 Cup Diced Zucchini 1 Cup Diced Yellow Squash 10 oz Peas & Carrots 1/2 Pint Grape Tomatoes 1 Lb Fettuccine 1/3 Cup Parmesan Cheese 1/4 Cup Pine nuts(OPTIONAL) Basil to Garnish In a Large Pot bring salted water to a boil. With a blender or food processor puree the Ricotta,Broth,Butter, and Salt and Pepper. Put the mixture into a heatproof bowl. Add Zucchini,Squash,Peas,and Carrots to the pot. While Veggies cook,Place the heat proof bowl on top of the pot of water to warm the sauce. Remove with a slotted spoon. Add some pasta to the boiling water and cook for 3 minuets;Drain;Toss with Veggies,Sauce, and tomatoes. Top with Pine nuts,Parmesan and Basil Serve immediately!! YUMMY!!!!

I'm not a vegetarian but I do love veggies and one of my favorites is Veggie Tostada (I use steamed carrots & potatoes cut up in small cubes) topped with cabbage and homemade salsa. I also love Re-fried Bean Tostadas or bean sandwiches. I grew up eating Lentil soup and it is very delicious and healthy. How about a fruit salad, I like mine with abit of whip crean and toasted coconut flakes. Fruit smoothies are always healthy, delicious and very filling for breakfast. I also love oatmeal w/a dab of honey, margarine and lots of blueberries and a wheat toast on the side w/fresh oj. I absolutely love soy milk, specially the vanilla flavor!

in my opinion, vegetarian food sucks. Inever eat vegetables, only meat. but to answer your question, tofurky with salad and tomato(I puked up the salad but everyone else said it was good). pumpkin pattie with brocolli and carrots. Also, vegetarian chili might be good.
