What is your favorite recipe featuring nuts/seeds or legumes (peas, beans, or lentils)?

Dahl.
Black chickpea and potato curry.
Pita chips with hummus.
Tacos/Burritos/Fajitas with black beans, rice, lettuce, tomato, salsa, hot sauce if you like.
Falafel wraps with hummus.
Bean chili with baked sweet potato topping.
Homemade veggie burgers made with beans and mushrooms.
Quinoa salad with beans of your choice, walnuts, and veggies.
Lentil soup.

Red beans and rice.
Just get a package of dry red beans, rinse, soak, and then simmer them all day long. The beans will become creamy after a few hours. The longer you cook them the better. They can be seasoned with salt, bay leaves, and lots and lots of cayenne. Traditionally you would also mix in some cut up sausage, but you could substitute some kind of vegetarian tofu based sausage. Then just serve it over rice.
This is the easiest thing in the world to make. It just takes a long time. You can't expect it to be ready in an hour. It needs a bare minimum of 2-3 hours for the beans to reach that creamy consistency.

I loved spiced nuts using a variety of nuts and I like them a little sweet as well as spicy. There are lots of variations and you can use your favorite spices such as cinnamon, nutmeg, cumin, chili powder with a mixture of a little warm agave nectar or maple syrup and Earth Balance or other oil. You coat the nuts in the mixture then bake in a slow oven (250 deg F) for about 45 mins and they're crunchy and yummy. There are recipes and more ideas at VegWeb.com.
