What should i make for a nice dinner?
In a few weeks i am staying with my boyfriend's family for a long weekend. I would like to cook dinner one of the nights, and am fairly capable in the kitchen. Canelloni, Lasanga, Seafood and anything spicy is apparently on the disliked list. Any suggestions?? Thanks :)

Wow - Im really surprised at how many "out there" ideas you received from responders before me. Chicken Curry - that will make the house nice and stinky for the entire weekend and everyones breath too. And whats with all the ingredients you cant pronounce and need a passport in order to purchase - um, no.
I think what you want to do is a lovely idea and my recommendation is go to with "Seasonal Fare". Ive been a chef for a long time and restaurants love to "play up" the seasons finest ingredients - and when Im entertaining (or making supper for my family), I do the same. In the name of Spring, I suggest (and Im hoping they have a bbq available), chicken and steak kabobs - heres how you do that - skewer all the marinated steak on one skewer, all the marinated chicken on another, all the veggies (multi colored peppers and onions) on another - chicken goes on first, when cooked halfway thru, lay beef down, cook to med. rare/medium depending on the families liking (altho - your bf should really be helping you do this. It will be soooo cute for his parents to watch you two "play house" where hes bbq'ing and youre in the kitchen - they will LOVE it, and Enjoy too, of course!!" - okay, the veg go on the grill very shortly after the beef - follow this method, ok. It doesn't make any sense to cook meat and veg together - they take different amounts of time. If you want chicken that wont make you sick, youre going to get burned and mushy veggies - ick! Do it separate, highly recommend. Serve with rice pilaf (you can do it yourself - or by Far East brand, which is a high quality box brand, its very well received - I substitute stock in a box for the water and its amazing! Here you have meat, veggies and rice. Simple, spring-like, and fresh - perfect! For dessert, in keeping with the tone, I suggest strawberry shortcake - you know, pound cake, macerated strawberries, and cool whip to garnish (add a sprig of fresh mint if you want the WOW factor, otherwise, skip it).
I have been cooking all my life, I attended culinary arts school in France, ala Julia Child - I know what Im talking about. Trust me - people like normal, "real" food, cooked to perfection. Anyone I know would rather have a nicely prepared roast beef with mashers than chicken curry. Just sayin...

You can make Chicken Pie its easy looks like it took great effort to make and BEYOND delicious *orgasmic:)* its just short crust pie and the chicken mix with cheese on top and your good to go
Short Crust Ingredients:
*200 grams of butter
*400 grams of flour
*100 ml of COLD water (or a bit more till you get the proper consistency
* Lemon zest (optional)
* Butter for greasing
* 1 egg yolk for greasing
Chicken Ingredients:
* 1/2 to 1 cup chicken broth
* 2 cups béchamel Sauce
* 3 medium potatoes diced
*1/2 Kilos fresh mushrooms
* 2-3 carrots diced
*200 grams Baby corn halved
*2 Medium sized brown Onions chopped
* 2 cloves garlic minced
*1tsp Cinnamon
* 4tsp Salt
*1/2 tsp Nutmeg
* 1tsp Blackpepper
* 1/2 stick butter
* 2 handfuls parmesan
* 1 handful cheddar
SHort Crust Pastry
* In a food processor pulse the flour and butter until a crumbly texture
* Put the mixture in a COLD bowl (we don't want the butter to melt).
* Add in the COLD water and kneed but not too much so the butter doesn't met just so all the ingredients mix (try using your fingers only not the Palms of your hand)
* Once everything has come together lightly flour you ball of dough cover and place in the fridge for 30 min
Chicken Mix:
In a pot melt your butter
* add in the onions once they are translucent add the garlic
* after 2 minutes add in all the veggies and stir
* add in the chicken and spices then stir again
* Now add in the chicken broth, not too much until you get a thick sauce consistency
cover the pot and let it cook checking on it every couple of minutes to make sure its not getting too dry
* once the veggies have cooked add in the béchamel sauce.
let it simmer for 2 minutes then turn off under it
* take your dough and on lightly floured surface kneed it gently
* then roll it out in the size pan you want to place it in
* then roll the dough onto your roller and place it in a greased pan make sure all the edges are touching and the dough is well placed in the pan
Using a fork make holes in the dough
Then add in the chicken mix to cover the whole base and level the mix sprinkle parmesan and cheddar on top
Using the other half of the dough also roll it out so that it covers the top of the pan
in the same way pick up your dough and place it so that it covers all of the chicken mix and fold it with the lower piece of dough
using a fork make holes in the middle of the top dough then glaze it and place it in an oven on medium low for 40 min then remove and serve Hot

Chicken curry and rice is always nice. Just tone down the red pepper / garam masala so it is not too spicy and serve with tangy mango picklerelish and crispy pappadums as an appetiser. Serve with homemade raita [yoghurt with chopped tomatoes and cucumbers] in case your BF finds the food a little spicy...the raita will cool him down and taste great to boot. Do this and I bet you a night full of tender romance and whispering of sweet nothings in your ear as you two reach a crescendo of intimacy, tenderness and warmth nestled in each others' arms (God I am such a hopeless romantic...I should be so lucky).

hi, if you want to make a nice dinner you have to take into consideration the likes and dislikes of your boy friend's family members. If they are vegetarian you can cook cheese with mushroom, rice and chapati, can also prepare fruit raita, and green salad etc.

why don't u try and shock them with a nice vegetarian food if i were u i would go with
1.soup as starter and follow it up with some Manchurian
2.some nice rice dish like pulav and some some raita
3.end it with a nice ice cream and fruit salad and some juice

Try a nice stew of hot pot, buy half baked crusty bread too so you can part bake it fresh, it will be warm and crusty, so gorgeous!
Korma or Tikka masala curry with Pilau rice and naan bread/popadum! (not spicy)
