Vegetables lost colour in steamer why?
I put some Broccoli and Cauliflower in the steamer yesterday and after the alloted time they were cooked but had lost a lot of their colour why did this happen, the Broccoli turned a bland green colour?

The compounds that give the vegetables their color break down in the heat. The more you cook them, the more they break down.

they suppose to it gets rid off the badness in them and the steam just gets ride off the Colour it will do it to any food u put in it its the compounds that break up
