On the transfers can you look at players who are not actually listed and make an offer for them, or do they have to be listed? I.E. nick some of the fringe players at the big clubs who are not for sale?

You can still make an offer to them if they are not for sale, but attempting to purchase players who aren't for sale can cost you a lot more than their estimated value. This is because the club isn't wanting to get rid of the player so you must give them an offer which pushes them to sell the player. Some players aren't buy able such as if the club doesn't have enough players no matter how much you offer they wont sell. But if you are going for fringe players you should be able to purchase them easily.

get bojan krikic, on the very commencing up he's sixteen, i offered him and placed him on my squad guy u, he became out to be a reliable sub, yet extra beneficial if he began, yet i had david villa and wayne rooney, so he couldnt start up over them
