Salmon is the most popular fish. The flavor from a Silver or King Salmon is hard to beat. Walleye is good but not the best. As proof, go to your local grocery store and look in the sea food section, and canned fish section. I don't see Walleye in either, but guess what? Salmon is there!

Tastes vary but the best fishy treat I had was in Lima Peru.
Striped pacific sea bass straight from the boat, into the restaurant over the road and boy was it good.
I was on the steps at the fish market when a boat came in and I asked about buying a fish, thinking I'd get the camping stove going in a quiet spot later .... as you do on a backpacking trip.
Si Senor, no problemos.... Senor de Silva cook good . Big friend. Amarillo ...and pointed to a restaurant.with a yellow and white fishy sign outside.
So I did.
$6 for the whole meal with thick fries, peppers and tomato, leafy salad, a beer, and a sweet rice and fruit dish to finish, cuz I brought my own fish.
Plate loaded up, the whole 4lb fish topped and tailed and gutted, limed inside and grilled, and hardly a bit of plate showing when he brought it to the table...piled up with goodies.
When I'd done the guy told me about ceviche...cebiche in local lingo. I called into another place next day and tried some..
Wow!

Walleye tastes like nothing. It has no flavor that's why so many people like it, it doesn't taste fishy...I like many different types of fish because they almost all have a distinct and different flavor. Ever eat a trout from a river that have been eating fresh water shrimp?

Edit: Hold it my answer may be no good.I see you are from the U.K
