How to cook tasty meals?
There are people I know that are diabetic and have high cholesterol. What are some good recipes that I can cook for them when I visit them that will be filling and satisfying and won't get them sick with too much sugar and fat?

(Meats)
15 minute chicken
Ingredients
1/4 cup Dijon mustard
2 tablespoons lemon juice
1-1/2 teaspoons Worcestershire sauce
1/2 teaspoon dried tarragon
1/4 teaspoon pepper
4 boneless skinless chicken breast halves (4 ounces each)
Directions
In a large resealable plastic bag, combine the first five ingredients; add chicken. Seal bag and turn to coat; marinate at room temperature for 15 minutes or refrigerate for several hours.
Drain and discard marinade. Grill, uncovered, over medium heat, for 8-12 minutes, turning once, or until a meat thermometer reads 170°. Yield: 4 servings.
Grilled Salmon
Ingredients
1/3 cup olive oil
3 tablespoons reduced-sodium soy sauce
2 tablespoons Dijon mustard
1/2 teaspoon dried minced garlic
6 salmon fillets (5 ounces each)
Directions
In a small bowl, combine the oil, soy sauce, mustard and garlic. Pour half of marinade into a large resealable plastic bag. Add the salmon; seal bag and turn to coat. Refrigerate for 30 minutes. Refrigerate remaining marinade.
Drain fish and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill salmon, covered, over high heat for 5-10 minutes or until fish flakes easily with a fork. Drizzle with reserved marinade. Yield: 6 servings.

Baked Sweet Potatoe Sticks
Ingredients
1 tablespoon olive oil
1/2 teaspoon paprika
8 sweet potatoes, sliced lengthwise into quarters
Directions
1.Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
2.In a large bowl, mix olive oil and paprika. Add potato sticks, and stir by hand to coat. Place on the prepared baking sheet.
3.Bake 40 minutes in the preheated oven.
Ingredients
8 ounces fresh green beans, trimmed
2 tablespoons low sodium soy sauce
1/2 tablespoon miso paste
1/2 teaspoon red pepper flakes
4 cloves garlic, minced
1 teaspoon grated fresh ginger root
1 tablespoon sesame seeds, toasted
Directions
1.Place the green beans into a steamer insert and set in a pot over one inch of water. Bring to a boil, cover and steam for 5 minutes. Remove from the heat and transfer beans to a serving bowl.
2.Meanwhile, in a small bowl, stir together the soy sauce, miso paste, red pepper flakes, garlic and ginger. Pour over the green beans and toss to coat. Sprinkle sesame seeds on top.

Diabetic Pie
Ingredients
1 (9 inch) prepared graham cracker crust
1 (1 ounce) package sugar-free instant vanilla pudding mix
1 cup cold milk
1 (8 ounce) can crushed pineapple, drained
1 (8 ounce) container frozen whipped topping, thawed
1 cup chopped pecans
Directions
1.In a medium bowl, whisk together pudding mix and milk. Fold in pineapple, whipped topping, and pecans. Pour mixture into prepared crust. Chill at least 2 hours before serving.

I am drooling over the smell in my crockpot right now..........Roast Beef Potatoes carrots and onions ummmm. Lasagna baked Mac and cheese Tuna noodle casserole with peas Pork and kraut Pork chops suddenly salad shake n bake chicken rigatoni and meatballs cube steak pan fry lotsa veggies baked ham and sweet potatoes you can clip and paste the list then copy when I am done haha pasta salad veggie soup chili chicken corn soup grilled cheese and tomato soup

Always season everything well, before you cook it. Once it is done taste it again and adjust the seasoning if necessary.

Grilled stuff is good because it is not fatty. Also, it is good to use olive oil as much as possible. Because it is the 'good' fat.
