I soaked my dry beans over night, what do I add to them when I boil them?

I always add Cumin, garlic powder and olive oil. I know everyone must have their own ingredients they add. I just want to know what they are. I don't add any pork and don't want to. The idea here is to have a fat free meal for health and fitness. I do want a lot of ideas because I boil a pot of beans every week. It is a whole lot cheaper than buying can beans and a whole lot more healthy without all the chemical additives of processed foods and all the salt and fat they add also. A 10 pound bag of beans last a few months or more for one person.

It does work as a health and fitness meal. Back in March my Doc told me, I got to quit junk foods because of my blood being so thick with Triglycerides. My triglyceride level was very high at 405 and normal is less then 150. Since then I have gone down from 212 lbs to weigh in at 195 this morning. My blood pressure has dropped so much the Doc took me off blood thinners and has said I can start running.

Update:

Sometimes I add chopped celery. Most of the time I add instant potato flakes to thicken it up and I also add oat meal to sweeten it up and thicken it up. I tried adding ground up red pepper but the sweetness of the oats and the spicy red pepper seem to contradict each other in flavoring.

Update 2:

Top off a bowl of beans with spaghetti sauce and they are fantastic.

    Have you thought about adding a chopped onion? If you like onion, the flavor with beans is good and it adds a slight bit of sweetness.

    Congrats on being healthier too!

    Soaking beans overnight is great, but I usually do a quick soak. Put dry beans in pan with plenty of water and a pinch of baking soda. Soda tenderizes the beans. Bring to a boil, remove from heat, and let soak for 2 hours. Drain completely. In cooking pot I then saute some onions lightly. Then add the beans to pan and cover with liquid (water is fine, of course, but I prefer chicken broth). Add a little black pepper, a slash or two of hot sauce, and a splash (about 1 T.) of cider vinegar. Cook until tender and then salt (I don't salt early because salt can toughen the bean). If you like your beans creamy, then mash some of the beans against the side of the pan with a large spoon and continue to simmer. Repeat this occasionally until the desired consistency is reached.

    how about a bean soup?

    you can add some beef broth, the beans, some pepper, veggies, and simmer it for a few hours

    if you choose to, you can thicken it with a little flour, but the beans will give off some starch too... you can even mash some of your beans to be used as a more natural thickener.
