I am looking for a broccoli salad recipe that does not contain meat, nuts, seeds, or onions.?

Dietary restrictions and allergies prevent my family from eating:

- meat

- seeds

- nuts

- onions

All of the recipes I have found contain one or more. Anyone have a recipe containing none?

    Broccoli Salad with Lemon, Garlic, and Chili Dressing This broccoli salad recipe is so refreshing, so easy, and so good for you… what else do you want from a vegetable side dish? Be sure to drain the broccoli very well before dressing.

    Makes 6 Portions Broccoli Salad

    Ingredients:

    1 1/2 pounds broccoli, cut into equal serving-sized pieces

    3 cloves garlic, mashed

    2 tbsp lemon juice

    2 tbsp rice vinegar

    1/2 tsp Dijon mustard

    1/3 cup olive oil

    red pepper flakes to taste

    salt and pepper to taste

    Preparation:

    Blanch the broccoli in boiling salted water until just tender. Remove to ice water until cool. Drain very, very well. Reserve in a large mixing bowl.

    Add the garlic, lemon juice, rice vinegar, and Dijon mustard to a small mixing bowl. Stir to combine, and then vigorously whisk in the olive oil, drizzling very slowly at first, to form an emulsified dressing. Season with red pepper flakes, salt, and black pepper to taste.

    Toss with the broccoli, and refrigerate for 30 minutes before serving. For best results, do not marinade more than 1 hour.

    Preparation:

    Using a steamer basket set over boiling water, steam the broccoli just until tender, for about 6 to 8 minutes.

    In a small saucepan, heat the butter, olive oil, lemon juice, and garlic until the butter melts. Toss the garlic lemon butter with the broccoli and season it with salt and pepper. Serve the lemon garlic broccoli warm or chilled.

    This lemon broccoli with garlic recipe makes 4 to 6 servings.

    GREEK BROCCOLI SALAD

    2 heads broccoli, chopped small (OR 1 head cauliflower, 1 head broccoli)*

    2 cups cherry tomatoes

    1 (6 ounce) can small pitted black olives (OR Kalamata olives), drained

    1 (6 ounce) package tomato basil feta cheese, crumbled

    Greek Vinaigrette OR Zesty Italian dressing

    In a large bowl, combine the broccoli, cauliflower, cherry tomatoes, olives and cheese. Add enough dressing to coat; toss and refrigerate overnight.

    *This recipe calls for raw broccoli, but if you prefer to first blanch the broccoli, just bring a large pot of salted water to a boil, put the broccoli in for 1-2 minutes, and then drain and cool before proceeding with the recipe.

    1 bunch fresh broccoli, stems peeled and and tops (flowers) cut off. Blanch flowers in boiling water for 30 second. Cook stems until crisp tender. Allow to cool and cut in bite size pieces.

    Saute 2-3 clove thinly sliced cloves of garlic in 1 tablespoon olive oil, forget it if relatives allergic

    1 box whole grain, whole wheat or regular penne or ziti cooked as directed on the package and drained

    2 tablespoons golden raisin soaked in hot water for a few minutes

    1 additional tablespoons olive oil plus the oil from the garlic or 2 fresh tablespoons olive oil

    1 tablespoon white balsamic vinegar or wine vinegar. Balsamic is sweeter and the brown balsamic is fine, but will change the color of the salad, slightly.

    Drain the raisins, add the rest of the ingredients and mix gently. Season with salt & pepper to taste and additional oil and vinegar, if needed.

    Here's one I love. It's very adaptable as well-to what you might have on hand on still taste great.

    While broccoli is blancing: prepare dressing:

    redwine vinegar

    mayo

    sugar

    (taste, you can make it sweet or not)

    prepare broccoli: blanch, remove stems, cut into bite size pieces

    Toss all together with:

    golden raisins (or craisins, etc.)

    add whatever other veggies you like

    carrot, pineapple, dates, apple or leave it as is.

    Just elave those things out. Use pretty much any otherr dired fruit instead of the raisens. Cherries, pineapple, crasisens etc.. would all be good in the salad.

    well if it was me i'd have the Brocolli with sliced tomatoes, lettuce and celery and drizzle cheese sauce over the top, would look and taste amazing!
