Cheap and Easy dinner recipes?

So during the summer, my stepkids live with us during the week. And boy can they eat! The last few weeks I've been trying to make easy things (spaghetti with meat sauce, bubble pizza, tacos, etc.) but after realizing half of my grocery bill was going to buying hamburger, chicken, or other meats, alone, I was really hoping to find some recipes that didn't call for meat to throw in there a couple days a week. The only problem is, I can't find anything online. Or anything that isn't too incredibly complicated and/or some semi- picky eaters will eat. Thanks in advance!

    You can make a whole crock pot of pinto or black beans for a couple dollars and literally about 5 minutes of actual hands on work. Serve a meal of beans in a soup like minestrone (a tomato based veggie soup with pasta), or add them to a chili made with ground turkey and serve with cornbread or rice. You can then puree the leftover beans with some of their cooking liquid, and freeze it in meal sized portions. Freeze flat in a zipper bag for about a 3 minute defrost. You can use the bean dip with tortilla chips, to add to taco meat, or add to burritos, or with rice...a homemade (cheaper and healthier) answer to refried beans.

    You can also do a pancake supper every now and then...cheap cheap. Jennie-O ground turkey frozen in tubes is $2.00 a pound...you can even get it pre-seasoned to taste like breakfast sausage (orange label) or you can get the regular kind (green label) and season it yourself, and serve it with your pancakes. OR you can serve pancakes with eggs.

    You can also keep your kids full of cheap summer produce. This is an ideal time to have the kids because the produce is beautiful and at best prices of the whole year. You can whip up fresh salsas to serve with chips, or you can just keep a fruit bowl on the table...bananas are about 50c a pound year round and summer means cheap grapes, berries, peaches, melons. You can make a lot of fresh green salads with homemade dressing using olive oil and lemon, fresh parsley, cilantro, and dill...all of which are reasonably priced...and you can use berries in place of tomatoes in a lettuce salad. Offer it to your kids with a balsamic vinaigrette, it is so yummy. You can fill them up with cabbage or broccoli slaw, fresh tomatoes sliced with salt or a little sugar, celery with some peanut butter, fresh made oven roasted sweet or white potatoes...and there is really nothing like a giant watermelon for dessert or bedtime snack in the hot weather. Slice it up on the back steps and let the kids eat it on the rind in the yard. Then you can set up the sprinkler, let them wash off the melon mess while they play, then strip them down and into pajamas before they come inside...and they are ready for bed.

    Rice Krispie treats are pretty cheap to make using store brand ingredients. Experiment with the different kinds of cereal...fruity, chocolaty, lucky charms, grahams, etc. You can also make peanut butter cookies and sugar cookies out of pretty basic inexpensive ingredients.

    You can do grilled cheese and soup, OR you can get a couple french breads and do a broiled or grilled cheesy bread. These classic lunch or a light summer supper.

    Also...every once in a while...go out to the local buffet restaurant, maybe you can find one where the kids eat free? And Little Caesar's Pizza in my area has $5 large pepperoni or cheese for a once a week treat...add a salad and a fruit and some two liter sodas for a Friday night dinner.

    You can use ground turkey to make your own meat sauce, taco meat, or meatballs. All of these are very versatile, and can be made in huge batches, then freeze for a head start on tons of reasonably priced and easy to make meals.

    You can feed them round box oatmeal in the morning, it is cheap and cooks up quick. Add any fruit, or some applesauce from a jar, or some raisins or even some cheap pancake syrup and cinnamon.

    I know the feeling. Here are some filling recipes that the kids like and won't break the bank, and not all of these need to have any meat. The pork verde stew lasts several meals and the pork shoulder roast is usually pretty cheap in cost. You can also stretch this into burritos. With a Burrito, add some rice, black beans, mexican cheese and some sour cream for a Super Burrito. It's very filling. none of these are hard to make and most of the ingredients are under $3, except for the pork shoulder roast. But for $50, you can eat very well and be full too. Email me for other things if you'd like. I have several meatless dishes which are really good.

    Grilled Cheese Sandwiches are good and kids love them.

    Try adding rice to things. Rice is pretty cheap and VERY filling. You'll finding them getting full without eating as much.

    Burritos with beans, cheese, and red(spanish) rice

    Cheese enchiladas

    Chili and rice(you can use canned chili)

    Campbell's Chunky soups(anything with meat in it taste great over rice or mashed potatoes)

    Mac n Cheese-add a can of tuna and a can of a carrot/pea mixture

    I suggest lemon and pepper tofu for those meatless days. You can add it to rice, pasta, salads or by itself as a side.

    Here is a recipe:

    Saute cubes of extra firm drained tofu in a pan with a couple tablespoons of olive oil til golden on all sides. Add 1/2 cup of lemon juice and cook on low for a couple mins. Then drain the tofu and add black ground pepper and enjoy..it doesn't taste bad, no worries

    Why don't you bake or grill some sort of fish...Maybe grilled salmon Balsamic Grilled Vegetables 1 medium yellow squash, sliced on bias 1 medium zucchini, sliced on bias 1 medium eggplant, sliced into 1/2-inch thick circles 1 red onion, sliced in 1/2-inch thick circles 2 Roma tomatoes, sliced in 1/2 lengthwise 1 red bell pepper, stemmed, seeded, and quartered 1 yellow bell pepper, stemmed, seeded, and quartered 2 portobello mushroom caps, gilled and peeled 3 green onions Kosher salt Freshly ground black pepper 1/2 cup extra-virgin olive oil 1/2 cup balsamic vinegar Preheat grill to high. Prepare all vegetables. Place vegetables in a roasting pan with the mushroom caps and green onions. Season vegetables generously with salt and pepper, and toss with the olive oil and balsamic vinegar. Place vegetables, cut side down, on the hot grill and cook for a couple minutes on each side, or until tender and nicely marked by the grill. Remove from grill and toss with an additional 1/4 cup balsamic vinegar. Season with salt and pepper, to taste.

    If you have a large family you should make casserole type stuff its good and always leftovers.

    -chicken & rice

    -tater tot casserole

    -ham & mac&cheese

    You could also buy groceries weekly....you could make out a menu each week and just buy the stuff you need for the week.
